A delicious vegan pasta dish made with creamy sauce and sun dried tomatoes.

Ingredients

  • 2 cups penne pasta
  • 1 cup sun dried tomatoes, chopped
  • 1 cup coconut cream
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add the sun dried tomatoes and cook for a few minutes.
  4. Stir in the coconut cream, salt, black pepper, and red pepper flakes. Cook until heated through.
  5. Add the cooked pasta and fresh spinach to the skillet. Toss to combine and heat until spinach is wilted.
