  • 2 large sweet potatoes
  • 1 cup turkey bacon, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes. Toss with olive oil, salt, cumin, and chili powder.
  3. Spread on a baking sheet and roast for 25-30 minutes or until tender.
  4. In a skillet, cook the turkey bacon until crispy.
  5. Add the bell pepper, corn, and black beans to the skillet and heat through.
  6. In a bowl, layer the roasted sweet potatoes and turkey bacon mixture.
  7. Garnish with fresh cilantro before serving.
