A deliciously easy homemade Strawberry Pop-Tart Pie that will delight both kids and adults alike.

  • 2 cups strawberries, diced
  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 package refrigerated pie crusts
  • 1 large egg, beaten
  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • 1 teaspoon sprinkles (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a medium saucepan, combine strawberries, sugar, cornstarch, and vanilla. Cook over medium heat until the mixture starts to thicken.
  3. Roll out one pie crust and place it in a pie dish. Pour in the strawberry mixture.
  4. Cover with the second pie crust, crimp the edges, and cut slits on top.
  5. Brush with beaten egg and bake for 25-30 minutes until golden brown.
  6. Let cool before glazing.
  7. For the glaze, mix powdered sugar and milk until smooth and drizzle over the pie. Add sprinkles if desired.
