These Strawberry Cheesecake Crumb Bars are a delightful treat, combining the rich flavors of cheesecake with fresh strawberries.

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon baking powder
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 8 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a bowl, combine flour, sugar, and baking powder. Stir in the melted butter until crumbly.
  3. Press half of the mixture into the bottom of the prepared baking dish.
  4. In another bowl, beat together the eggs, cream cheese, powdered sugar, and vanilla until smooth.
  5. Spread the cream cheese mixture over the crust, then layer the chopped strawberries on top.
  6. Sprinkle the remaining crumb mixture over the strawberries.
  7. Bake for 30-35 minutes, or until the top is golden brown.
  8. Allow to cool before cutting into bars.
