4 pieces chicken thighs
1 cup coconut milk
2 tablespoons fresh basil, chopped
1 tablespoon curry powder
2 cloves garlic, minced
1 teaspoon ginger, grated
2 cups jasmine rice
4 cups water
Salt to taste
Instructions
In a large bowl, mix together the coconut milk, basil, curry powder, garlic, and ginger to create a marinade.
Add the chicken thighs to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.
In a pot, bring the water to a boil. Add the rice and a pinch of salt. Cover and reduce heat to a simmer for about 15 minutes or until rice is cooked.
In a skillet, heat a little oil over medium heat and cook the marinated chicken thighs until they are fully cooked and golden brown, about 7-10 minutes on each side.
Serve the chicken over the jasmine rice, garnished with additional basil if desired.
Notes
For a spicier kick, add chopped chili peppers to the marinade.
