- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup chopped apples
- 1/4 cup sugar (for rolling)
- 1 tablespoon ground cinnamon (for rolling)
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and beat until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped apples.
- In a small bowl, mix the rolling sugar and cinnamon.
- Form the dough into balls and roll in the cinnamon sugar mixture.
- Place on the prepared baking sheet and bake for 10-12 minutes or until golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.
