  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples
  • 1/4 cup sugar (for rolling)
  • 1 tablespoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture and beat until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chopped apples.
  7. In a small bowl, mix the rolling sugar and cinnamon.
  8. Form the dough into balls and roll in the cinnamon sugar mixture.
  9. Place on the prepared baking sheet and bake for 10-12 minutes or until golden brown.
  10. Allow to cool on the baking sheet for a few minutes before transferring to wire racks to cool completely.

Notes

  • For an extra touch, add a drizzle of caramel on top once the cookies are cooled.
  • Ensure the apples are finely chopped for even distribution.
