These Pumpkin Protein Balls are a delicious and healthy no-bake energy bite perfect for a quick snack or breakfast.

Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 cup rolled oats
  • 1/2 cup protein powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine pumpkin puree, almond butter, and honey.
  2. Add rolled oats, protein powder, cinnamon, and nutmeg, mixing until combined.
  3. If desired, fold in chocolate chips.
  4. Refrigerate the mixture for about 30 minutes to firm up.
  5. Once chilled, scoop out small portions and roll into balls.
  6. Store in an airtight container in the refrigerator.
