A comforting and creamy vegetable soup made in one pot for easy cleanup and delicious flavors.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 4 cups vegetable broth
  • 2 cups diced potatoes
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in carrots and celery, cooking for another 5 minutes.
  4. Add vegetable broth and potatoes, bring to a boil.
  5. Reduce heat and simmer for 20 minutes or until potatoes are tender.
  6. Blend the soup until smooth, then stir in heavy cream.
  7. Add thyme, basil, salt, and pepper. Cook for an additional 5 minutes.
  8. Serve hot and enjoy!

Notes

  • This soup can be made ahead of time and reheated.
  • Adjust the thickness by adding more or less cream.
