  • 1 cup green or brown lentils
  • 2 large carrots, grated
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water and cook them in a pot of boiling water for about 20-25 minutes or until tender.
  2. While the lentils are cooking, prepare the vegetables.
  3. In a large bowl, combine the cooked lentils, grated carrots, diced bell pepper, red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
  5. Pour the dressing over the salad and toss everything together until well combined.
  6. Let the salad sit for at least 15 minutes to allow the flavors to meld.
