  • 1 pound chicken thighs
  • 1 cup BBQ sauce
  • 3 cups chicken broth
  • 1 cup corn, frozen
  • 1 cup black beans, drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat and add chicken thighs. Cook until browned.
  2. Remove chicken and add rice, stirring for 2 minutes.
  3. Pour in chicken broth and BBQ sauce, then add corn and black beans.
  4. Return chicken to the pan, cover, and simmer for 25 minutes until rice is cooked.
  5. Fluff with a fork and serve hot.
