  • 1 cup Greek yogurt
  • 1 ripe banana, mashed
  • 1 cup fresh strawberries, chopped
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine Greek yogurt, mashed banana, honey or maple syrup, eggs, and vanilla extract until well mixed.
  3. In a separate bowl, whisk together whole wheat flour, baking soda, and salt.
  4. Gently fold the dry ingredients into the wet ingredients until just combined, then fold in the chopped strawberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • Feel free to substitute with other fruits if strawberries are not available.
  • These muffins can be frozen for later enjoyment.
