- 1 cup Greek yogurt
- 1 ripe banana, mashed
- 1 cup fresh strawberries, chopped
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine Greek yogurt, mashed banana, honey or maple syrup, eggs, and vanilla extract until well mixed.
- In a separate bowl, whisk together whole wheat flour, baking soda, and salt.
- Gently fold the dry ingredients into the wet ingredients until just combined, then fold in the chopped strawberries.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
