  • 1 pound chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup kalamata olives
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, oregano, salt, and pepper.
  3. Coat the chicken breasts in the mixture and place them on a baking sheet.
  4. Bake for 25-30 minutes or until fully cooked.
  5. Once cooked, let the chicken rest for a few minutes before slicing.
  6. In a large bowl, combine quinoa, cherry tomatoes, cucumber, feta cheese, olives, red onion, and parsley.
  7. Add sliced chicken on top.
  8. Drizzle with more olive oil or your favorite dressing if desired.
