  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup pumpkin puree
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup unsalted butter, melted

Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, and spices.
  2. In another bowl, combine the pumpkin puree, brown sugar, eggs, milk, and vanilla. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a griddle or frying pan over medium heat and add a little butter.
  5. Pour 1/4 cup of batter for each pancake onto the hot surface.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown.
