These Easy Stuffed Bell Peppers are packed with flavor and make for a delightful meal, featuring turkey bacon for an extra twist.

  • 4 bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 6 slices turkey bacon, chopped
  • 1 cup diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off of the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  4. In the same skillet, cook the ground turkey until browned. Drain any excess fat.
  5. Add the cooked rice, diced tomatoes, garlic powder, onion powder, Italian seasoning, and half of the cheese. Mix well.
  6. Stuff the bell peppers with the turkey mixture and place in a baking dish.
  7. Top with remaining cheese and the crispy turkey bacon.
  8. Bake in the preheated oven for 25-30 minutes or until the peppers are tender.

Notes

  • For added flavor, you can sprinkle some fresh herbs on top before serving.
  • Feel free to substitute the turkey bacon with regular bacon if preferred.
