  • 1 ½ cups crushed chocolate graham crackers
  • ½ cup melted butter
  • 1 cup dark chocolate chips
  • 3 packages (8 ounces each) cream cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh raspberries

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, mix crushed graham crackers with melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. Melt dark chocolate chips in a microwave or double boiler, then let cool slightly.
  5. In a large bowl, beat cream cheese, sugar, and vanilla together until smooth.
  6. Add eggs one at a time, mixing well after each addition.
  7. Pour in the melted chocolate and mix until fully incorporated.
  8. Fold in fresh raspberries gently.
  9. Pour the cheesecake mixture over the crust in the springform pan.
  10. Bake in the preheated oven for 45-50 minutes or until set.
  11. Let the cheesecake cool, then refrigerate for at least 4 hours before serving.
