A deliciously creamy and easy-to-make chicken tikka masala cooked in a crockpot.

Ingredients

  • 1 pound chicken thighs
  • 1 can coconut milk
  • 2 tablespoons tikka masala spice
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 teaspoon salt
  • 1 tablespoon cooking oil

Instructions

  1. Heat oil in a pan and sauté onions until translucent.
  2. Add garlic and ginger, cooking for another minute.
  3. Add the chicken thighs and tikka masala spice, mixing well.
  4. Transfer the mixture to the crockpot and pour the coconut milk on top.
  5. Cook on low for 6-8 hours or high for 4 hours.
  6. Once cooked, shred the chicken and stir well.
  7. Serve hot with rice or naan.

Notes

  • For extra flavor, marinate the chicken in spices overnight.
  • Serve with fresh cilantro for garnish.
