Crispy Honey-Roasted Butternut with Cranberries, Feta & Pumpkin Seeds

A delicious side dish, perfect for autumn gatherings, featuring sweet butternut squash.

Ingredients

  • 1 medium butternut squash
  • 1/2 cup cranberries
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup pumpkin seeds
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the butternut squash into cubes.
  3. Toss the butternut squash with honey, olive oil, salt, and pepper.
  4. Spread the squash on a baking sheet and roast for 25-30 minutes or until tender and crispy.
  5. In the last 5 minutes of roasting, add cranberries and pumpkin seeds to the baking sheet.
  6. Once done, remove from the oven and sprinkle with feta cheese.
  7. Serve warm.

Notes

  • For added flavor, consider using balsamic drizzle on top before serving.
  • This dish can be served warm or at room temperature.
