8 ounces elbow macaroni
6 strips turkey bacon
1 cup cooked chicken ham, diced
1 cup sweet corn, kernels
1/2 cup mayonnaise
1/4 cup sour cream
1 tablespoon lime juice
1/2 teaspoon chili powder
1/4 teaspoon salt
1 tablespoon fresh cilantro, chopped
Instructions
Cook the elbow macaroni according to package instructions, then drain and set aside.
In a skillet, cook the turkey bacon until crispy, then crumble it into pieces.
In a large bowl, combine the cooked macaroni, turkey bacon, chicken ham, sweet corn, mayonnaise, sour cream, lime juice, chili powder, salt, and cilantro.
Toss everything together until well combined.
Chill in the refrigerator for at least 30 minutes before serving.
Notes
For extra flavor, add some diced jalapeños or a sprinkle of feta cheese.
Feel free to substitute the chicken ham with any other protein of your choice.
