  • 2 cups grilled corn
  • 1 cup cherry tomatoes, halved
  • 1 cup diced red bell pepper
  • 1/2 cup red onion, finely chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1 tablespoon chili powder
  • 1/4 cup cilantro, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine the grilled corn, cherry tomatoes, bell pepper, and red onion.
  3. In another bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Add the cooked pasta to the vegetable mixture, then pour the dressing over and toss to combine.
  5. Cover and refrigerate for at least 30 minutes before serving.
  6. Garnish with cilantro before serving.
