A deliciously creamy and comforting gnocchi dish made with roasted tomatoes.

Ingredients

  • 1 pound gnocchi
  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. On a baking sheet, toss cherry tomatoes with olive oil, salt, and pepper. Roast for 20 minutes.
  3. In a large pot, cook gnocchi according to package instructions.
  4. In a saucepan, heat the heavy cream over medium heat, then add roasted tomatoes and parmesan cheese.
  5. Mix the gnocchi with the sauce, add garlic powder, and stir until well combined.
  6. Serve hot, garnished with fresh basil.

Notes

  • For added flavor, you can use smoked paprika.
  • This dish can be made vegetarian by using vegetable broth.
