- 2 boneless chicken breasts
- 8 ounces penne pasta
- 1 tablespoon olive oil
- 1 tablespoon Cajun seasoning
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups spinach
- 1/2 cup cherry tomatoes
- Salt to taste
- Black pepper to taste
- Cook the penne pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with Cajun seasoning, then cook in the skillet until golden brown and cooked through.
- Remove chicken from skillet and slice.
- In the same skillet, add heavy cream and bring to a simmer.
