  • 2 boneless chicken breasts
  • 8 ounces penne pasta
  • 1 tablespoon olive oil
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach
  • 1/2 cup cherry tomatoes
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with Cajun seasoning, then cook in the skillet until golden brown and cooked through.
  4. Remove chicken from skillet and slice.
  5. In the same skillet, add heavy cream and bring to a simmer.
  6. Add Parmesan cheese, spinach, and cherry tomatoes, and stir until spinach wilts.
  7. Add the cooked pasta and sliced chicken. Toss to combine.
  8. Season with salt and black pepper to taste.
  9. Serve hot and enjoy!

Notes

  • Can substitute chicken with shrimp for a seafood twist.
