  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup cooked turkey bacon, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup green onions, sliced
  • 1/2 cup shredded cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cottage cheese, eggs, salt, and pepper.
  3. Add the chopped turkey bacon, bell peppers, green onions, and shredded cheese. Mix well.
  4. Pour the mixture into greased muffin tins, filling each cup about 3/4 full.
  5. Bake for 20-25 minutes or until the bites are set and lightly golden on top.
  6. Let them cool for a few minutes before removing from the tins.
