1 1/2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup brown sugar
Instructions
Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
In a bowl, cream together the butter and sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla.
In another bowl, mix together the flour, baking powder, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, starting and ending with the dry ingredients.
Fill the muffin liners about 2/3 full with the batter.
In a separate bowl, mix the brown sugar and cinnamon for the topping. Sprinkle over the muffins.
Bake for 18-20 minutes or until a toothpick comes out clean.
Let cool in the pan for a few minutes before transferring to a wire rack.
Notes
For extra flavor, add chopped nuts or chocolate chips to the batter.
