- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 1/2 cup chopped walnuts (optional)
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Mix in the melted butter, sugar, egg, and vanilla extract until well combined.
- Add the baking soda and salt, and mix again.
- Stir in the flour until just combined.
- In a separate bowl, mix the cinnamon with some sugar for the swirl.
- Pour half of the batter into the prepared loaf pan.
- Sprinkle half of the cinnamon sugar mixture on top, then pour in the remaining batter.
- Top with the rest of the cinnamon sugar and walnuts if using.
- Bake for 60 minutes or until a toothpick comes out clean.
- Allow to cool before slicing.
