- 2 cups cooked rice
- 1 pound chicken breast, diced
- 1 large sweet potato, cubed
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Preheat oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
