A delicious and nutritious Chicken & Sweet Potato Rice Bowl that’s perfect for any time of the year.

Ingredients

  • 2 cups cooked rice
  • 1 pound chicken breast, diced
  • 1 large sweet potato, cubed
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato cubes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. In a skillet, cook diced chicken over medium heat until no longer pink, about 7-10 minutes.
  4. Add broccoli florets to the skillet and cover, cooking for an additional 5 minutes or until tender.
  5. In a bowl, combine cooked rice, roasted sweet potatoes, chicken, and broccoli. Mix well and serve warm.
