  • 1 cup grated carrots
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mash the bananas and mix in the grated carrots.
  3. Add the sugars, oil, eggs, and vanilla extract to the banana-carrot mixture and stir until combined.
  4. In a separate bowl, combine the flour, baking soda, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 60-75 minutes, or until a toothpick comes out clean.
  8. Let cool before removing from the pan.
